1 cup sultanas
1 tsp baking soda
1 TB butter/marg
1 TB golden syrup
Dash of vanilla essence
1 cup boiling water
1 1/2 cups of flour
1 1/2 tsp baking powder
Put sultanas, butter/marg, golden syrup and vanilla into a bowl. Sprinkle over baking soda. Carefully pour boiling water over and leave to stand until butter/marg melts.
Stir in flour and baking powder and mix till combined. Pour into greased loaf tin and bake at 180 degrees for about 40 -45 minutes until it springs back when touched in the middle. Cool in the tin.

You could use raisins or mixed fruit instead I guess, I'm planning on doing it with mixed fruit next time.

All the choc would melt when you poured the boiling water over. Unless you added them later?

i made this today adn had my doubts that it would work, no sugar, no egg and only a tbsp of butter...oooh. But just had it for pud and it was really quite nice to be honest. I thought you had missed out a key ingredient Emma with preggie brain

I tried this and found it a little bland so made it again but as well as 1 cup sultanas, I added:
1/4 cup chopped dried apricots
1/4 cup chopped dates
1/4 cup coconut
1tbls LSA (linseed, sunflower and almond)
and some choc chips.
YUM!!!

How did the choc chips go? Did they not melt with the boiling water?
I made it again tonight, it's a great recipe coz I threw it together while the sausages were in the oven then just chucked it in after and it cooked while we ate dinner. I used mixed fruit this time instead of sultanas tho.
